Chocolate-chip Honey Cookies

This recipe produces a large batch of approximately 40 cookies (or biscuits as we know them!), but we've never had a complaint of baking too many!

 

  • 250g (1/2 pound) butter
  • 80ml (1/3 cup) liquid honey
  • 90g (1/2 cup) brown sugar
  • 2 eggs
  • 360g (3 cups) flour
  • 15ml (1 tablespoon) baking powder
  • 5ml (1 teaspoon) vanilla
  • 300g (2.5 cups) chocolate chips

 

(Preheat oven to 175 degC / 350 degF on fan bake.)

Soften butter, then using a large bowl and an electric beater mix with honey and sugar and beat on high for at least 5mins until creamy.

While beating on low, gradually add eggs (one at time), then vanilla.

Mix in sifted flour and baking powder, then chocolate chips (just to combine - do not over-stir).

Line a baking tray with baking paper.

Take a spoon of mixture at a time roll into a ball (we use a heaped teaspoon) and place on baking tray, leaving space for cookie to spread while cooking. Use a cookie stamp or back of a fork to shape.

Bake for 8 minutes at 175 degC / 350 degF.

Allow to cool before serving.
