Walnut and Honey Granola
This delicious home-made granola will ensure you never buy store-bought muesli or granola again. It is easy to adapt with your favourite ingredients, and fills the home with the most amazing home cooking smell!
(Preheat oven to 180 degC (360 degF)).
- 900g (10 cups) rolled oats
- 225g (1.5 cups) sunflower seeds
- 225g (1.5 cups) shredded coconut
- 225g (1.5 cups) coarsely chopped walnuts
- 2.5g (1/2t) coarse salt
- 180ml (3/4 cup) sunflower oil
- 30ml (2T) liquid honey
- 10ml (2t) pure vanilla extract
Combine rolled oats, seeds, coconut, walnuts and salt in a large bowl.
In a separate bowl whisk oil, honey and vanilla extract.
Pour liquid blend over dry mix while stirring with a wooden spoon to minimise lumpiness.
Lay mix over two rimmed baking dishes, spreading as widely as possible.
Bake for 10 minutes at 180 degc (360 degF) then turn.
Bake for 15minutes, turn, and again in 5 minute intervals until golden brown.
Once cooked transfer to a large bowl and allow to cool (to prevent sticking to baking dishes).
Once cooled store in an airtight container.
Serving suggestion: Breakfast bowl with almond milk, natural yoghurt and a drizzle of liquid honey.
